Asparagus is cheaper now because its spring, that’s why we’ve been having more asparagus lately. I like asparagus, and I’ve recently turned Jason into an asparagus eater too. Some people say asparagus makes your pee smell bad (read discovery article on that) but I don’t think it happens to me, or my pee smells bad to begin with. Just a little tidbit of science!
- 1 bundle asparagus (about 1 lb)
- 1 tablespoon olive oil
- juice of one lemon
- 1 1/2 teaspoon dijon mustard (I didn’t have dijon, so I used yellow mustard)
- 1 teaspoon brown sugar
- salt and pepper to taste
To make the lemon-dijon sauce, combine the juice of lemon, brown sugar, mustard and salt and pepper. Mix until everything is combined.
Peel the bottom 2 inches of the asparagus with a vegetable peeler.
Lay the asparagus on a baking sheet. Drizzle the olive oil over the asparagus. Add salt and pepper to taste.
Bake in the oven at 425 for 10 to 12 minutes.
When ready to serve, pour the lemon-mustard sauce over the asparagus.
