I have come to the conclusion that if you fry anything, it will be good. However, frying is really unhealthy, so I’ve recently come up with breading and baking everything. It surely isn’t as good as frying, but it comes really close.
In an attempt to find new and fun things to do with asparagus, I’ve decided to use them as fries!
- 1 lb asparagus, peeled and cut into 2″ sections
- 3 tablespoons cooking oil
- 2/3 cup breadcrumbs
- 2 eggs, beaten
- salt and pepper to taste
In a mixing bowl, add asparagus and oil, then coat asparagus with the oil.
Dip each piece of asparagus in the egg mixture, then in breadcrumbs, and set aside.
Do the same for every piece of asparagus.
Place the asparagus pieces in a single layer, on a cookie sheet lined with aluminium foil.
Bake the asparagus for 10 to 12 minutes at 425F.
Serve with ketchup, mayo or any sauce!
