One day, I was just too lazy to cook any ‘active’ food, and decided to take the easy way out. I decided to just make a very basic baked chicken thigh recipe, and made too much of them so that I would have extras to use for almost anything else (since it’s so basic, it could be in anything!)
Here’s something for the person who’s lazy, tired and has way too much to do. 1 minute of active work, and 40 minutes of waiting, and there’s a delicious main dish for you!
Ingredients (4 servings)
- 4 chicken thighs
- salt and pepper to taste
- 2 tablespoons butter
Trim the chicken thighs of excess fat and skin.
Spread approximately 1/2 tablespoon of butter under the skin of the chicken thigh.
Sprinkle salt and pepper on the skin side and underside of the chicken.
Place in a baking dish and bake at 400F for 40 minutes.
Serve and enjoy!
