I love eggplants, and you know what? The best way to cook an eggplant is the simplest way to cook it! ON THE GRILL! I’ve tried so many ways of cooking eggplant and I think it is best on the grill, because it gets slightly charred, and also doesn’t suck up as much oil like it would if you pan fried it. Somehow, it is always sweeter on the grill too. I guess the less you meddle with your food, the fresher and sweeter it remains!
- 1 large eggplant or 2 small eggplants
Ingredients for Marinade
- 2 cloves garlic, minced
- 4 leaves sage, chopped
- 3 tablespoons red wine vinegar
- 4 tablespoons extra virgin olive oil
- salt and pepper to taste
Slice the eggplant lengthwise into 1/2″ thick slices, then mix all the ingredients of the marinade in a bowl.
With a basting brush, spread the marinade onto each side of the eggplant, then place the eggplant on the grill. Grill each side for about 5-6 minutes.
