Baked Salsa Chicken


It was one of those days where work was long and I got home late. I didn’t have any dinner planned, and so I took the quick and easy way out of throwing random things I find in the fridge together. We had salsa and chicken. I threw those together, and voila – it tasted great! For those of you who were wondering, salsa does taste different when cooked. It’s not good or bad, it is just different and worth a shot! I really liked it, and so did Jas (and he doesn’t like salsa!)


  • 4 chicken thighs
  • 1 1/2 tablespoon taco seasoning
  • 4 tablespoons salsa
  • freshly ground black pepper to taste


In a bowl, combine the chicken thighs, taco seasoning and salsa, and let marinate for about 30 minutes.


Place the chicken thighs on a baking sheet and bake at 375F for 40 minutes.

Serve and enjoy!
