We love red peppers because they are so sweet and absolutely delicious. They come with a natural cup, and so we decided to stuff it – just like what a cup is supposed to be used for. I know stuffed peppers aren’t normal, but orzo-stuffed? Well, I don’t think that they are so incredibly creative, but they do taste good, and that’s the most important.
- 2 bell peppers, halved and seeds removed
- 3 cloves garlic, minced
- 1 small bunch cilantro, leaves only, chopped
- 1 cup orzo, cook according to directions on the box
- salt and pepper to taste
- 1 tablespoon olive oil
- 1 roma tomato, diced
- 1/2 cup shredded cheese (I used ‘Mexican blend’)
In a heated saucepan, add oil and fry the chopped garlic until fragrant, then turn off the heat.
Add cooked orzo, chopped cilantro, salt and pepper. Mix with a spoon.
Spoon the orzo mixture into the red bell pepper cups.
Top with shredded cheese, and bake the bell peppers in the oven at 350F for 30 minutes.
Serve and enjoy!
