Jas and I both love zucchini, and are always on the prowl for new recipes with zucchini in it. When I saw zucchini bites on Pinterest, I figured that we should give this a shot, since we already had all the ingredients on hand.
These are tasty, super easy to make, and we both liked it very much. This recipe makes twelve bites, which will be great for a larger family, so I will be mindful about making a full recipe next time. They do go down really easily though, so be careful with it!

Ingredients (12 bites)
- 1 tablespoon olive oil
- 1 white onion, chopped
- 2 zucchinis, shredded
- 3 eggs
- 1/4 cup heavy cream
- 1/2 cup self-raising flour
- 1/2 cup fresh parmesan cheese
- 2/3 cup shredded cheddar cheese
- salt and pepper to taste
Preheat an oven to 350 degrees F (175 degrees C). Grease a 12 muffin miniature muffin pan.
Heat the olive oil in a large skillet over medium heat. Add the onions and fry them until slightly transparent.
In a bowl, add the shredded zucchini, sauted onions, eggs, cream, parmesan cheese, cheddar cheese, salt and pepper. Stir the egg mixture until everything is combined evenly, then slowly sieve in the flour.
Spoon the mixture evenly into 12 muffin cups. Bake in preheated oven until a toothpick inserted in the center comes out clean, 15 to 20 minutes.
Let cool, serve and enjoy.
