Oatmeal and Walnut Brownies

For those who know, I love brownies – especially those that are so dense that are almost mousse-like. However, those are so bad for you!! Hence, I schemed to devise a new healthy, but still yummy brownie recipe !

It’s oatmeal walnut brownie is just the perfect thing. It is soft, dense, and bursting with goodness with all that oatmeal and walnuts in there. It also packs in some bite and flavor! It’s not the mousse-y type because a brownie with oatmeal and walnuts can definitely not be mousse-y – too much of a contrast in texture!

Also, I added a tiny bit of sea salt on the top, so it became sea salt-oatmeal-walnut brownies. Some of you may think its an overkill, but I love it! Yum!

  • 3/4 cup brown sugar
  • 1/2 cup flour
  • 1/3 cup baking cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/3 cup chopped walnuts
  • 1/2 cup instant oatmeal
  • 2 eggs
  • 1/2 cup canola oil
  • 1/4 cup milk
  • 1 teaspoon vanilla essence
  • [optional] sea salt for topping

  • Put everything (except seasalt) in a large mixing bowl.
  • Mix until evenly combined.
  • Pour batter into an 8×8 greased baking pan.

  • Bake at 350F for 25 minutes.
