Walnut Cookies

Here is another of my special Chinese New Year posts! For Chinese New Year, we usuall have a ton of goodies at home. We usually have at least ten different kinds of cookies out, and it is just the most awesome time of the year because there is just food everywhere! Yum! Some of my favorite cookies are cheese cookies and the -nut cookies, and today I made some walnut cookies! One can use peanuts or walnuts for these, and I’ve seen pistachio cookies too, though at some point I want to try it with pecans and cashews!

Anyway, its a great recipe and it is so easy to do. I ate four within minutes of it coming out of the oven and I am sure this batch wont live to see the new year. For those of you on this coast with Nemo coming, stay safe and stay wam. Happy New Year everyone!

Ingredients (makes approximately 20 cookies)

  • 75g butter, melted
  • 90g plain flour
  • 50g whole walnuts, roasted
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 40g castor/icing sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla essence

Directions

Pound the roasted walnuts in a mortar until powdery.

Add all the ingredients in a mixing bowl and mix with a spoon. This dough will be very crumbly.

Take about 1 teaspoon of dough mixture and press it together with your fingers. It should hold its shape. Place this on a cookie sheet and press the dough down lightly with fingers.

Repeat and do the same with the remaining dough.

Bake in a preheated oven for 15-20 minutes at 350F.
